Heritage
The Funayuki - literally "boat-going" - was the knife Japanese fishermen carried aboard to handle the day's catch from head to tail. Lighter than a Deba but with a more robust spine than a Yanagiba, it is one of the most versatile traditional Japanese knife forms. This vintage example carries the honest character of a working knife from a different era: carbon steel that takes a keen edge and develops a natural patina with use. A one-of-a-kind piece not available anywhere else.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Apply a light coat of food-safe oil to the carbon steel blade to prevent rust
- Single bevel - sharpen on the flat (ura) side only; use a whetstone on the bevel side
- Store on a magnetic rack or in a knife roll
