Why Scalloped?
When slicing soft or sticky foods — cucumber, potato, cheese, cooked meat — a flat blade creates suction that causes food to cling. The hollow-ground indentations on this blade break that suction, allowing each slice to fall cleanly away. The result is faster prep, cleaner cuts, and less frustration. Everything else is pure Shun Classic: VG-MAX steel clad in 32 layers of Damascus stainless steel, bead-blasted to reveal its flowing wave-like pattern, with an ebony PakkaWood® D-shaped handle that's as comfortable after an hour of prep as it is at the first cut.
Care & Maintenance
