The Japanese Carving Knife

Japanese carbon steel carving knives from the mid-20th century represent a high point in functional blade craft - thin, precisely ground, and built for the kind of controlled, deliberate slicing that Western blades rarely achieve. Japanese carbon steel at this hardness takes an exceptionally fine edge and rewards careful maintenance with performance that modern stainless steel simply cannot match. This blade has been treated for rust, cleaned, and professionally sharpened. The handle features a rare-grain Tasmanian Myrtle timber - the grain lines reflect the age and growth stages of the tree, making each piece truly one of a kind. Finished with Constantia Organic finishes, produced in Port Lincoln, SA. Fitted and shaped by Josh at GT Edgeworks, who specialises in reviving vintage knives to heirloom quality.
