Where This Stone Fits in Your Sharpening System
The 220 grit stone is the starting point for serious repair work - it removes metal quickly to reshape a damaged or chipped edge. It is not for regular maintenance. Once the edge is repaired with the 220 grit stone, move to a medium stone (400 or 1000 grit) to refine, then finish with a 6000 or 8000 grit stone to polish. The White Alundum abrasive is harder and more wear-resistant than standard aluminium oxide stones, meaning less dishing over time and more consistent results session after session.
How to Use
- Soak the stone in water for 5-10 minutes before use
- Use only for chipped, damaged, or very dull edges - not for regular maintenance
- Sharpen at 16° for Japanese knives, 20° for Western knives
- Keep the stone wet throughout - add water as needed
- Follow with a medium and finishing stone after use
- Rinse and dry after use, store flat to prevent warping
- Flatten periodically with a leveling stone
