The K Sabatier Difference

The Au Carbone Olive Wood line pairs carbon steel with a handle material as characterful as the blade itself: olive wood, with its distinctive grain and natural warmth, secured to the tang with three stainless rivets. The paring knife's short, rigid blade with central tip is ideal for peeling garlic, trimming herbs, segmenting citrus, and all the precise detail work that a larger blade simply can't reach. Carbon steel takes a finer, keener edge than stainless and responds exceptionally well to sharpening - the more you use and maintain it, the better it performs.
Care & Maintenance
- Hand wash only, never dishwasher
- Dry immediately after every use - carbon steel will rust if left wet
- Apply a light coat of food-safe oil if storing for extended periods
- Expect a natural patina to develop over time - this is normal and protective
- Do not soak or leave the olive wood handle wet
- Occasionally treat the olive wood handle with a food-safe wood oil to keep it conditioned
- Sharpen with a whetstone - carbon steel responds exceptionally well to sharpening
