The chef's knife 20 cm. blade from the Shun Nagare series by KAI features a sharp-edged blade crafted using an innovative forging process that combines two types of steel with different properties, creating a 72-layered Damascus steel construction. This combination of flexible VG 2 steel and exceptionally hard VG 10 steel results in a hardness of 61 (±1) HRC. The outcome is a double-edged blade with outstanding edge retention and excellent sharpness. Do not wash in the dishwasher. The handle is riveted pakka wood.
Kai Shun Nagare: the stylish handle
The handle is ergonomically shaped with a slightly tapered line and a small belly. As such each knife feels amazing in hand. The handle is made from black-grey pakka wood and secured with two rivets. The forged tang in the handle provides a nice balance with the blade. With an amazing finish, as you might expect from these beautiful kitchen knives.
