At 240mm with a narrow 38mm blade height, it glides through proteins with minimal resistance. AUS10 at 60 HRC delivers excellent edge retention and corrosion resistance, while the hammered tsuchime finish reduces food stick. Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Hone regularly on a ceramic rod or leather strop
