AUS10 Damascus - Built for the Vegetable Station
The Yoshimune Nakiri pairs an AUS10 stainless core with a Damascus stainless cladding and a hand-hammered tsuchime finish. The nakiri's flat profile and blunt tip are purpose-built for the push-cut and the chop - no rocking required, no tip to catch on the board. AUS10 at 60 HRC delivers excellent edge retention and corrosion resistance, while the hammered finish reduces food stick on the blade face. A capable, good-looking vegetable knife that earns its place in any kitchen.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Hone regularly on a ceramic rod or leather strop
- Sharpen on a whetstone (1000/3000 grit recommended)
