The Yoshimune Difference
VG10 is one of the most respected stainless steels in Japanese knife-making - a cobalt-enriched alloy that achieves high hardness (64 HRC) with excellent edge retention and good corrosion resistance. The Damascus cladding adds visual depth with a flowing pattern across the blade, while the tsuchime hammered finish creates small air pockets between blade and food, reducing drag and preventing thin slices from sticking. At 2.0mm spine thickness, this is a thin, precise grind for a 210mm gyuto - equally capable across vegetables, fish, and proteins. The rosewood octagonal handle provides a warm, secure grip with a premium aesthetic to match the blade.
