Aogami #2 (Blue Steel #2 by Hitachi Metals) is a chromium and tungsten-enriched high-carbon steel that delivers excellent edge sharpness with slightly superior edge retention compared to White Steel #2 - a favourite among Japanese knife enthusiasts for its balance of performance and sharpenability. The 33-layer Damascus cladding - known in Japan as Suminagashi, meaning "ink flowing through water" - creates a flowing, marbled pattern across the blade that is as functional as it is beautiful, protecting the reactive carbon core while adding visual depth. The bunka profile combines the flat cutting stroke of a nakiri with a pointed reverse-tanto tip, making it equally capable at push-cutting vegetables and detail work. The walnut octagonal handle provides a warm, secure grip.

Care and Maintenance

  • Hand wash only - never dishwasher
