The Yoshihiro Difference
Yoshihiro (Goh Umanosuke Yoshihiro) by Yamawaki Cutlery MFG., LTD has cultivated its craft through a 600-year history in Sakai - the city renowned as Japan's professional cutlery capital. SK-4 is a high-carbon tool steel prized for its combination of toughness and edge-taking ability. The sujihiki is the Japanese equivalent of a Western carving knife - its long, narrow blade and acute tip allow it to glide through roasts, fish fillets, and cured meats with minimal resistance and no tearing. At 240mm it is the ideal entry length for home cooks and professionals alike.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after use - SK-4 will rust if left wet
- Apply a light coat of food-safe oil if storing for extended periods
- Expect a natural patina to develop with use - this is normal and protective
- Hone regularly with a honing rod to maintain the edge between sharpenings
- Sharpen with a whetstone - SK-4 responds well to a medium-grit stone
