The Yoshihiro Difference
Yoshihiro (Goh Umanosuke Yoshihiro) by Yamawaki Cutlery MFG., LTD has cultivated its craft through a 600-year history in Sakai - the city renowned as Japan's professional cutlery capital. SK-4 is a high-carbon tool steel prized for its combination of toughness and edge-taking ability. The honesuki is the Japanese boning knife - its triangular blade profile, stiff spine, and acute tip make it ideal for breaking down whole poultry, trimming joints, and fine butchery work. At 150mm it is compact and highly manoeuvrable.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after use - SK-4 will rust if left wet
- Apply a light coat of food-safe oil if storing for extended periods
- Expect a natural patina to develop with use - this is normal and protective
- Hone regularly with a honing rod to maintain the edge between sharpenings
- Sharpen with a whetstone - SK-4 responds well to a medium-grit stone
