Heritage and Character
Yaxell - formally Yax Cutlery - has been operating out of Seki City, Gifu Prefecture, since 1932. Long before their international export lines, they were producing carbon steel knives for the Japanese domestic professional market. A vintage Yaxell in carbon steel predates the stainless transition and represents the brand at its most traditional - harder steel, thinner geometry, and the kind of edge retention that comes from proper heat treatment rather than marketing. The 150mm petty at this standard is a genuine find: a well-known maker's earlier work in a form that simply isn't made anymore.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after use to prevent rust
- Hone regularly on a smooth steel or fine ceramic rod
- Sharpen on Japanese water stones (1000/3000 grit)
- Store on a magnetic rack or in a knife roll - never loose in a drawer
