The paring knife is the most personal knife in the kitchen - used in hand for peeling, coring, trimming, and all the detail work that a larger blade can't reach. The Classic Ikon's ergonomic handle and double-bolster design deliver the same comfort and balance as the larger Ikon knives, making extended in-hand work less tiring. PEtec sharpening grinds the edge to a precise 14° on each side for a finer, longer-lasting edge. Forged from a single piece of X50CrMoV15 steel in Solingen, Germany.
Care & Maintenance
- Hand wash recommended - dishwasher safe but not recommended for longevity
- Dry immediately after washing
- Hone regularly with a honing steel to maintain the 14° edge
- Sharpen with a whetstone or professional sharpening service when needed
- Store on a magnetic strip or in a knife block to protect the edge
