The Ikon Difference
The Classic Ikon's defining feature is its double-bolster design - a half bolster at the blade that allows the entire edge to be sharpened all the way to the tip, and a second bolster at the end of the handle that adds weight and counterbalance for a more natural, fatigue-free grip. The ergonomically shaped handle sits more comfortably in the hand than the Classic's traditional profile, making it the preferred choice for cooks who spend long hours at the board. The PEtec edge is laser-controlled and ground to a precise 14° on each side - sharper out of the box and longer-lasting than conventionally sharpened knives. Care & Maintenance
- Hand wash recommended - dishwasher safe but not recommended for longevity
- Dry immediately after washing
- Hone regularly with a honing steel to maintain the 14° edge
- Sharpen with a whetstone or professional sharpening service when needed
- Store on a magnetic strip or in a knife block to protect the edge
