The Chinese chopper's broad, rectangular blade is designed for the push-cut and rocking-chop techniques of Chinese cuisine - slicing through cabbage, herbs, and vegetables with the full width of the blade, then using the flat to scoop and transfer ingredients to the wok. Wüsthof's PEtec sharpening grinds the edge to a precise 14° on each side, delivering a finer, sharper edge than a traditional cleaver. The double-bolster Ikon handle provides ergonomic comfort and perfect balance for extended prep sessions. Forged from a single piece of X50CrMoV15 steel in Solingen, Germany.

Care & Maintenance

  • Hand wash recommended - dishwasher safe but not recommended for longevity
  • Dry immediately after washing
  • Hone regularly with a honing steel to maintain the 14° edge
  • Sharpen with a whetstone or professional sharpening service when needed
  • Do not use on bones - this knife is not a cleaver
  • Store on a magnetic strip or in a knife block to protect the edge
