The Wüsthof Classic Fillet Knife 16cm is forged in Solingen, Germany from X50CrMoV15 steel - a shorter, flexible blade for filleting smaller fish, removing pin bones, and navigating the tight spaces around ribs and skin where a longer blade would be unwieldy.

Flex Where It Matters
The flexible blade bends to follow the contour of the spine and ribs, keeping the edge in constant contact with the bone for maximum yield and minimum waste. At 16cm, this is the blade for smaller fish - trout, bream, snapper, flathead - where a longer blade would be unwieldy and imprecise. PEtec sharpening grinds the edge to a precise 14° on each side. The full-tang, triple-riveted synthetic handle provides a secure grip through wet, slippery conditions. Forged from a single piece of X50CrMoV15 steel in Solingen, Germany.
Care & Maintenance
- Hand wash recommended - dishwasher safe but not recommended for longevity
- Dry immediately after washing
- Rinse immediately after contact with fish and salt
- Hone regularly with a honing steel to maintain the 14° edge
- Sharpen with a whetstone or professional sharpening service when needed
- Store on a magnetic strip or in a knife block to protect the edge
