The Wüsthof Classic Chai Dao Knife 17cm is the hybrid blade that takes the shape of a Santoku and the broad profile of a Chinese chopping knife and merges them into one - a fluid, versatile blade for the rocking chop, the push cut, and everything in between.

Two Knives. One Blade.
The Chai Dao takes the slightly curved blade of the Santoku - ideal for the fluid rock-chop - and combines it with the broad, tall profile of the Chinese chopping knife, giving you more blade height for scooping and transferring ingredients. The result is a knife that handles mincing herbs, slicing vegetables, and chopping with equal confidence, while the wide flat can be used to crush garlic or transfer prep from board to pan. Wüsthof's PEtec sharpening grinds the edge to a precise 14° on each side - finely ground toward the cutting edge, so this knife is not for chopping bones. Forged from a single piece of X50CrMoV15 steel in Solingen, Germany.
Care & Maintenance
- Hand wash recommended - dishwasher safe but not recommended for longevity
- Dry immediately after washing
- Hone regularly with a honing steel to maintain the 14° edge
- Sharpen with a whetstone or professional sharpening service when needed
- Do not use on bones - use a cleaver or butcher's knife for that
- Store on a magnetic strip or in a knife block to protect the edge
