The Nakiri

The nakiri is Japan's dedicated vegetable knife: a flat-edged, rectangular blade designed for push cuts and pull cuts without the rocking motion of a Western chef's knife. The flat profile means the entire edge contacts the board on every stroke, producing clean, even cuts through everything from daikon to cabbage to herbs.
