Heritage
The Sumidagawa (斅田川) brand is named for the Sumida River - the historic waterway flowing through the heart of Tokyo. In the mid-to-late 20th century, wholesale cutlery guilds based in Asakusa and Kappabashi commissioned regional bladesmiths to produce high-carbon steel utility knives under culturally symbolic local names. These knives were built as honest, professional-grade tools: reliable, easy to maintain, and capable of holding a sharp edge through demanding daily kitchen prep. The natural wood handle keeps the balance neutral for versatile chopping, slicing, and dicing tasks.
Care & Maintenance

- Dry immediately after use to prevent rust
- Hone regularly on a whetstone
- Sharpen on Japanese water stones (1000/3000 grit)
- Store on a magnetic rack or in a knife roll - never loose in a drawer
