Yasugi Steel (安来鉰) is one of Japan's most revered blade materials - a high-purity carbon steel descended from the ancient Tamahagane sand iron used in katana production. Its structural hardness allows a terrifyingly sharp, laser-thin edge with exceptional retention. The Deba's thick spine and heavy weight distribution handle the demanding work of whole-fish breakdown and poultry jointing, while the hollow-ground Urasuki back creates an air pocket between steel and ingredient, eliminating food friction and tearing for pristine, restaurant-quality cuts.
