The Santoku

The santoku is Japan's most versatile all-purpose knife - shorter and flatter than a gyuto, with a sheepsfoot tip that keeps the edge in full contact with the board through every stroke. Single-bevel geometry is unusual for a santoku and marks this as a professional-grade blade - ground to one side only for a level of edge precision that double-bevel knives cannot match.
