The Gyuto
Sakai is Japan's knife-making capital, and Kiyochika is one of its respected names - producing blades for professional kitchens where performance is non-negotiable. The gyuto is Japan's answer to the Western chef's knife: longer, thinner, and ground to a more acute angle.
