Sakai Kikumori was established in 1926 by Kawamura Hamono in Sakai City - Japan's historic capital of cutlery and home to over 90% of the country's professional knife production. Operating as a specialist wholesaler, Kikumori collaborates with Sakai's master blacksmiths and sharpeners to produce high-performance blades for both professional chefs and serious home cooks. This 300mm gyuto/sujihiki is a dual-purpose workhorse: long enough for slicing proteins and fish, with the flat profile of a gyuto for general prep. The western-style handle makes it immediately familiar to European-trained cooks, while the Sakai carbon steel core delivers the edge retention and sharpness that Japanese blades are renowned for.
