Sakai Ichiji knives are handcrafted by Baba Hamono, a renowned workshop in Sakai, Osaka - Japan's historic capital of cutlery. The brand name "Ichiji" comes from the nickname of founder Baba Kuniharu. Continuing a 600-year regional legacy that evolved from crafting samurai swords and tobacco blades, these blades are shaped by master artisans using time-honored forging and sharpening techniques. The deba is the traditional Japanese fish knife: a thick, single-bevel blade designed to break down whole fish, cut through bone, and fillet with precision. This is a specialist tool built to last generations - and this example has never been used.
Care & Maintenance
- Hand wash individually - never dishwasher
- Dry immediately after use to prevent rust
- Hone on the flat (ura) side only - single-bevel geometry
