The Sakai Hidegaku Story
Sakai, a city in Osaka Prefecture, has been Japan's foremost knife-making region for over 600 years - and it is from this tradition that the Sakai Hidegaku set emerges. This six-piece carbon steel collection brings together a Yanagiba (230mm), two Usuba vegetable knives (170mm and 140mm), a Deba (150mm), a small Deba (110mm), and a Nakiri (170mm) - a comprehensive toolkit for classically trained Japanese chefs. Each blade is fully forged, ground to a fine edge, and built for the kind of repetitive, precise work that defines Japanese professional cookery. Carbon steel demands more care than stainless, but rewards the effort with a sharpness and responsiveness that serious cooks prize. Finding a complete six-piece set in this condition is exceptionally rare - these knives were made to last a lifetime, and this one has.
