The engraving chiseled into this knife blade reveals that it is a commemorative corporate gift rather than a standard commercial brand, featuring a primary signature from 貞守 (Sadamoru).
🔍 Breakdown of the Engravings
-
The Maker / Brand Name (Top Faint Characters):
- The faint vertical text chiseled near the upper spine reads 貞守 (Sadamoru).
- This is the exact same Sakai City artisan lineage you encountered on the very first Deba knife you shared in this thread.
-
The Commemorative Message (Lower Bold Characters):
- The larger, clearly legible vertical engraving below it reads 「農協合併記念」 (Nōkyō Gappei Kinen).
- 農協 (Nōkyō): Short for Nōgyō Kyōdō Kumiai, the ubiquitous Japan Agricultural Cooperatives (JA) network.
- 合併記念 (Gappei Kinen): "Merger Commemoration".
📜 The Story Behind This Knife
In mid-to-late 20th-century Japan, regional Agricultural Cooperatives (Nōkyō) frequently merged to pool resources and consolidate local farming districts. To celebrate these historic mergers, the cooperative management would commission bulk runs of traditional, high-quality forged kitchen cutlery from reputable cutlery hubs like Sakai.
These knives were handed out as exclusive, premium commemorative gifts to local member farmers, cooperative employees, or community leaders.
💡 Knife Type: Usuba / Nakiri
This blade geometry is a traditional Nakiri or Usuba Hōchō, instantly recognizable by its flat, rectangular profile and squared-off nose. It is specifically designed as a dedicated vegetable knife, allowing you to make clean, flush contact across the entire cutting board to smoothly chop, slice, and push-cut greens without creating "accordion" veggies.
Care & Maintenance- Hand wash only - never place in a dishwasher
- Dry immediately after use to help prevent rust
- Hone with a smooth steel or fine ceramic rod when required
- Sharpen on suitable Japanese water stones
- Store on a magnetic rack, in a sheath or in a knife roll
