Experience Misono's Western Precision Applied to the Cleaver Form
A rare Misono in cleaver format. Where Misono built its reputation on precision Gyutos and Sujihiki slicers, this Vintage Misono Cleaver 190mm brings the same Seki City craftsmanship and molybdenum steel quality to a broader, heavier blade profile. At 190mm, it sits in the mid-weight cleaver range: versatile enough for vegetable breaking and protein portioning, with enough spine heft for moderate bone work.

Heritage
Misono was founded in 1935 in Seki City with a mission to master Western-style double-bevel blades for professional kitchens. Their molybdenum steel series was designed to bring Japanese craftsmanship to a corrosion-resistant platform - particularly useful in wet professional environments where carbon steel requires constant drying and oiling. Molybdenum improves the steel's resistance to oxidation and moisture without significantly compromising edge quality. This cleaver format is unusual for Misono - better known for their slender slicing blades - which makes it a distinctive collector's piece and a functional tool for kitchens that want Japanese metallurgy in a wider format. The full-tang timber handle keeps the balance point low for controlled chopping strokes.
