The Vintage Japanese Yanagiba Knife 220mm is a fully forged carbon steel single-bevel sashimi knife made in Japan - a one-of-a-kind piece for the serious cook or collector who appreciates the precision and tradition of Japanese blade craft. Note: the inside of the handle has some surface rust and may benefit from a clean or replacement handle - the blade itself remains in great condition.

The Yanagiba. Japan's Sashimi Blade.
The Yanagiba (柳刃包丁 - willow blade knife) is the traditional Japanese knife for preparing sashimi and nigiri sushi. Its long, thin, single-bevel blade is designed to slice through raw fish in a single drawing motion - minimising cell damage and preserving the texture and presentation of the fish. Carbon steel takes a finer, keener edge than stainless and is the traditional choice for Japanese professional knives. One-of-a-kind and not available anywhere else.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- Apply a light coat of food-safe mineral oil to the blade if storing long-term
- Sharpen with a whetstone - single bevel requires sharpening on the flat (ura) side only
- A natural patina will develop with use - this is normal and desirable
