The Willow Blade
The yanagiba (柳刃包丁 - "willow blade knife") is Japan's dedicated sashimi knife - long, thin, and single-bevelled for drawing cuts that produce clean, glistening slices of raw fish without tearing the flesh. At 200mm with a 2.4mm spine tapering to a fine edge, this vintage example is a nimble, precise sashimi knife suited to smaller fish and detailed work. Carbon steel at 58 HRC takes a razor edge and rewards regular honing. Unbranded but built with the honest craftsmanship of Japanese workshop production - a genuine vintage piece that won't be repeated.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- Apply a light coat of food-safe oil if storing long-term
- Single bevel - sharpen on the flat (ura) side only with a whetstone
- Professional sharpening recommended if unfamiliar with single-bevel geometry
- Store on a magnetic strip or in a knife roll - avoid loose drawers
