A vintage unbranded Japanese Yanagiba - single-bevel carbon steel with a wood handle, made in Japan. The Yanagiba is Japan's dedicated sashimi knife: long, thin, and ground on one side only for the clean pull-stroke that produces paper-thin slices of fish without tearing.

Condition

Care and Maintenance

- Sharpen on Japanese water stones - single bevel, right-hand only
- Apply a light coat of food-safe oil if storing for extended periods
