The yanagiba - literally "willow blade" - is Japan's dedicated sashimi knife. Its long, thin, single-bevel blade is designed to slice raw fish in a single drawing stroke, producing clean cuts that preserve the texture and presentation of the fish. This unbranded example is fully forged with a full tang.
