The Sujihiki - Japan's Slicing Knife
The sujihiki is the Japanese equivalent of the Western carving knife - but longer, thinner, and more precise. The single bevel edge produces an exceptionally clean cut by reducing drag through the protein, and the long blade allows for full-length slicing strokes that minimise tearing. Carbon steel at 58 HRC takes a finer, keener edge than stainless and develops a natural patina with use. The wood handle is traditional and comfortable. A genuine working knife with decades of Japanese craftsmanship behind it.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- Apply a light coat of camellia or food-safe mineral oil periodically
