The Santoku. Japan's All-Purpose Knife.
The santoku - meaning "three virtues" - is designed for meat, fish, and vegetables in equal measure. Its flat-to-gently-curved edge suits both push cuts and light rocking, and the wide blade provides good knuckle clearance. At 170mm it is a compact, highly capable all-rounder suited to home kitchens. Carbon steel takes a finer, keener edge than stainless and is the traditional choice for Japanese professional knives. One-of-a-kind and not available anywhere else.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- A natural patina will develop with use - this is normal and protective
- Sharpen on a whetstone to maintain the edge
- Store on a magnetic strip or in a knife block to protect the edge
