The Santoku - meaning "three virtues" - is Japan's most versatile kitchen knife, excelling at slicing, chopping and dicing across meat, fish and vegetables. This vintage 140mm example is a compact, nimble cutter with a fully forged high carbon steel blade that takes and holds a razor edge. The sheepsfoot profile and flat edge make it ideal for push-cutting on the board. Carbon steel develops a natural patina over time, improving its non-stick properties and adding character unique to each knife. One-of-a-kind vintage piece.
