The nakiri is Japan's dedicated vegetable knife - its flat, rectangular blade is designed to push-cut cleanly through vegetables without the rocking motion of a Western chef's knife. At just 0.1mm thick behind the edge, this example is exceptionally thin - ideal for paper-thin slices and precision prep. Fully forged with a full tang and a traditional wood handle. Carbon steel takes a keener edge than stainless and rewards regular whetstone maintenance with exceptional sharpness.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Apply a light coat of camellia oil after drying to prevent rust
- Sharpen on a whetstone - carbon steel responds well to regular honing
- Store on a magnetic rack or in a knife block
