The Gyuto Set
The Gyuto (beef sword) is Japan's answer to the Western chef's knife - designed for professional Western cuisine, it excels at rock-chopping vegetables, slicing proteins, and fine tip work. At 250mm, this Gyuto has the reach for large prep tasks while remaining nimble enough for detail cuts. The two shorter blades round out the set for utility and precision work. Carbon steel at 58 HRC sharpens to a finer edge than stainless and develops a natural patina with use. One-of-a-kind and not available anywhere else.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- Apply a light coat of food-safe mineral oil to the blades if storing long-term
- Sharpen with a whetstone - carbon steel responds exceptionally well to sharpening
- A natural patina will develop with use - this is normal and desirable
