The funayuki - literally "going on boat" - was the knife Japanese fishermen carried aboard to clean and fillet their catch, then prepare their own meals at sea. That dual-purpose heritage makes it one of the most versatile knives in the Japanese tradition: nimble enough for fish, capable enough for meat and vegetables. This unbranded example is fully forged with a full tang and a traditional magnolia wood handle. At just 0.8mm thick behind the edge, the blade is exceptionally thin and responsive. Carbon steel takes a keener edge than stainless and rewards regular whetstone maintenance.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Apply a light coat of camellia oil after drying to prevent rust
- Single-bevel knives require specialist sharpening - professional sharpening recommended
- Store in a saya or on a magnetic rack
