The Deba - Japan's Fish Knife, Ready for a New Handle
The deba's thick spine absorbs the force of cutting through fish heads and bones, while the single bevel edge produces clean, precise fillets. This blade is in excellent condition - the steel is solid and the edge is intact. Fit it with your own handle and you have a genuine vintage Japanese deba at a fraction of the cost of a new knife. Carbon steel at 58 HRC takes a keen edge and rewards careful whetstone sharpening.
Care and Maintenance
- Fit a handle before use - bare tang is sharp and unsafe without one
- Hand wash only - never dishwasher
- Dry immediately after washing to prevent rust
- Apply a light coat of camellia or food-safe mineral oil to the blade
- Sharpen on a whetstone - single bevel, flat face only
