The deba bocho is one of Japan's most specialised kitchen knives - designed from the ground up for breaking down whole fish. Its thick spine and single-bevel geometry allow it to behead fish cleanly, then ride along the backbone to produce clean fillets. This example is unbranded but fully forged with a full tang and a traditional magnolia wood handle. Stainless steel construction means it is more forgiving than carbon steel vintage debas, requiring less maintenance while still delivering the single-bevel performance the style is known for.
