Heritage
The Deba first appeared in Sakai during the Edo period and remains the definitive Japanese fish knife. Its thick spine and robust heel handle the force needed to remove fish heads cleanly, while the rest of the blade rides against the bones to produce clean, precise fillets. At 150mm this is a versatile mid-size Deba suited to a wide range of fish.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Apply a light coat of food-safe oil to the carbon steel blade to prevent rust
- Sharpen on a whetstone; professional sharpening recommended for single-bevel geometry
- Store on a magnetic rack or in a knife roll
