Experience a Vintage Japanese Deba
A vintage Japanese Deba in carbon steel - a single-bevel fish-breaking knife built for filleting, portioning, and heading whole fish. At 150mm it is the classic home-kitchen Deba size, precise enough for detailed work yet robust enough for the task.
The Specs
- Steel: Carbon steel
- Blade length: 150mm
- Bevel: Single bevel (right-hand)
- Handle: Wood
- Origin: Made in Japan
- Condition: Vintage / pre-owned
Heritage
The Deba is one of Japan's most specialised traditional knives - its thick spine and single-bevel grind are engineered specifically for breaking down whole fish, from heading and gutting to filleting. This vintage example carries the honest character of a working knife from a different era: carbon steel that takes a keen edge and develops a natural patina with use. A one-of-a-kind piece not available anywhere else.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Apply a light coat of food-safe oil to the carbon steel blade to prevent rust
- Single bevel - sharpen on the flat (ura) side only; use a whetstone on the bevel side
- Store on a magnetic rack or in a knife roll
