Experience the Compact Power of a Vintage Japanese Deba - A Carbon Steel Fish Knife Ready for the Kitchen.

- Overall length: 240mm

At 110mm, this is a ko-deba - the compact end of the deba family, ideal for small fish, poultry jointing, and detailed butchery work. Fully forged with a full tang and a traditional magnolia wood handle, this unbranded example is built to the same standard as named Japanese knives of its era. Carbon steel takes a keener edge than stainless and responds well to a whetstone, making it a rewarding knife for anyone who enjoys maintaining their tools. Double bevel geometry makes it more accessible than a traditional single-bevel deba.
Care and Maintenance
- Hand wash only - never dishwasher
- Dry immediately after washing
- Apply a light coat of camellia oil after drying to prevent rust
- Sharpen on a whetstone - carbon steel responds well to regular honing
- Store in a saya or on a magnetic rack
