The Henckels Twinworks
J.A. Henckels has been producing knives in Solingen, Germany since 1731 - one of the oldest and most respected names in European cutlery. The Twinworks line represents the working-grade forged range from Henckels, built for professional use with the same quality steel and construction as their premium lines. This cleaver is a fully forged, full tang blade - meaning the steel runs the full length of the handle for balance and durability. Carbon steel at 58 HRC takes a keen edge and responds well to a honing steel, developing a natural patina with use that many cooks prize. A genuine piece of German cutlery history.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after use - carbon steel will rust if left wet
- Apply a light coat of food-safe oil if storing for extended periods
- Expect a natural patina to develop with use - this is normal and protective
- Hone regularly with a honing steel to maintain the edge
- Sharpen with a whetstone as needed
- Store on a magnetic strip or in a knife block
