Heritage
The Yosaku (与作) name is rooted in Japanese folklore - a hardworking mountain woodcutter whose very survival relied on his forged blade. True to this heritage, Yosaku cutlery bypasses modern machine stamping: each blade is hand-signed using the Tagane-bori technique, where the kanji characters are carved directly into the steel with a small hammer and chisel. The high-carbon hagane steel core delivers a toothy, aggressive edge that answers beautifully to whetstone maintenance. Decades of patina add a natural layer of protection against deep corrosion while giving this knife an unmistakable, one-of-a-kind aesthetic.
Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after use to prevent active rust
- Hone regularly on a whetstone
- Sharpen on Japanese water stones (1000/3000 grit)
- Store on a magnetic rack or in a knife roll - never loose in a drawer
