The Vintage Gustav Emil Ern Flexible Brisket Knife 360mm is a fully forged German carbon steel brisket knife from one of Solingen's most storied - and rarest - cutlery houses. Gustav Emil Ern was one of the last companies to employ highly skilled craftsmen to hand-make their knives, and when mass production took over after World War 2, they couldn't compete on quantity. What they left behind was quality - and this 360mm flexible brisket knife is a testament to that.

While Henckels and Wusthof moved to mass production after the war, Gustav Emil Ern held to hand-craftsmanship until the business could no longer sustain it. Today their knives are sought after by the world's best chefs for their exceptional quality and, if properly cared for, perform as if brand new for years. This 360mm flexible brisket knife is the ideal tool for slicing large cuts of brisket, roasts, and smoked meats - the long, thin, flexible blade glides through meat with minimal resistance. One-of-a-kind and not available anywhere else.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Dry immediately after washing to prevent rust
  • Apply a light coat of food-safe mineral oil to the blade if storing long-term
  • Sharpen with a whetstone - carbon steel responds exceptionally well to sharpening
  • A natural patina will develop with use - this is normal and desirable
