When Henckels and Wusthof moved to mass production, Gustav Emil Ern could not compete on price - but their knives remained exceptional in quality. Today, these knives are prized by collectors and professional chefs alike. The flexible brisket knife is designed for slicing large cuts of smoked and braised meat with long, clean strokes - the thin, flexible blade follows the contours of the meat for minimal waste.
Care and Maintenance
- Remove remaining rust with a fine abrasive and food-safe oil before use
