The Gustav Emil Ern Butcher Knife

Gustav Emil Ern was one of Solingen's premier cutlery houses, producing fully forged blades for professional butchers and serious home cooks across Europe. This 250mm butcher knife carries that heritage - the long, slender carbon steel blade is built for breaking down large cuts, trimming fat, and portioning with precision. At just 200g, it is lighter than it looks, making it easy to handle through extended prep sessions. Carbon steel sharpens to a finer edge than stainless and develops a natural patina with use. One-of-a-kind and not available anywhere else.

Care & Maintenance

  • Hand wash only - never dishwasher
  • Dry immediately after washing to prevent rust
  • Apply a light coat of food-safe mineral oil to the blade if storing long-term
  • Sharpen with a whetstone - carbon steel responds exceptionally well
  • A natural patina will develop with use - this is normal and desirable
