Minamoto no Sukehisa knives were hand-forged in Tokyo by master blacksmith Masayasu Yoshitomo, who began learning the craft from his father at age 15 in 1952. Operating from a traditional workshop in Kajicho, Tokyo, Yoshitomo built functional, no-nonsense kitchen cutlery representing the distinct urban blacksmithing tradition of the capital - separate from the more famous southern hubs of Sakai and Seki. The workshop closed in the early 2000s, making authentic Sukehisa blades prized new-old-stock finds. Collectors and professional chefs seek them out for their incredible carbon-steel performance and the story they carry of mid-20th-century Tokyo knife culture. At 300mm, this gyuto is a serious slicer - and this example has never been used.
Care & Maintenance
- Hand wash individually - never dishwasher
- Dry immediately after use to prevent rust
- Hone regularly on a fine whetstone
- Sharpen on a Japanese water stone (1000/3000 grit)
- Store in original box or on a magnetic rack - never loose
