The Santoku
The Tsunehisa SW Washiji Santoku is built around Swedish 19C27 stainless steel - a high-purity, fine-grained steel prized for its ability to take a keen, refined edge and its ease of sharpening on Japanese water stones. The San Mai construction wraps the hard core in softer stainless cladding for toughness and protection. The washiji finish - a fine pear-skin texture - reduces drag and prevents food from sticking to the blade face. The santoku profile handles meat, fish, and vegetables with equal confidence. At 170mm it is a compact, highly capable all-rounder suited to home and professional kitchens alike. Care & Maintenance
- Hand wash only - never dishwasher
- Dry immediately after each use
